Granola For The Soul

My sister in law made this granola when we went to visit them in Michigan a few months ago. I absolutely love it! Thank you Telia! It holds together better than any other granola recipe I've tried and the flavor is terrific. It calls for walnuts, pecans and almonds but you can add any kind of nut you want. Store bought granola will never taste the same after you've tried this. This recipe calls for a lot of ingredients but after the initial shopping trip you should be set; it makes a ton. Enjoy!






















Granola

Preheat oven 350 degrees. Line 2 large baking sheets with foil and spray them with cooking spray.

In a large bowl mix:

8 cups oats
1 1/2 cups wheat germ
1 1/2 cups oat bran
1 cup sunflower seeds
1 cup chopped almonds
1 cup chopped pecans
1 cup chopped walnuts
1 cup coconut

Bring to a boil:

1/2 cup brown sugar
1/4 cup maple syrup
3/4 cup honey
1 cup oil
1 tsp cinnamon
1 1/2 tsp salt
1 tsp vanilla

Pour over oat mixture and mix well. Bake for 20 minutes stirring half way. Let cool and stir in raisins or any kind of dried fruit.

Note: The first time I made this I pulled it out at 20 minutes and mixed it around. It seemed soft still so I put it back in the oven for 10 more minutes. Pulled it out again and it was over cooked. The granola will harden when it cools-do not over bake!
